Patty August 12, 2010 at 12:36 pm: Hello Elena!! I have just discovered your website and really enjoyed it. I love the way you write, it brings a chuckle to my morning. I recently moved to Oregon from New Jersey and I enjoyed reading about “sitting in traffic until your head explodes” , that was too funny!!! I also miss the Spanish restaurants in Newark and NYC, my favorite dish was always paella!!! Unfortunately, there are no Spanish restaurants out here in “Cowboy Land” and I was hoping you could help me try to make my own Paella. I have been an amateur cook for several years and would love to try and at least come close to making a traditional dish. If you could help me with the technique and recipe, I would very much appreciate it. Thanks for the website and take care, Patty

The good news is that my dad makes a delicious paella and I’ve helped and watched him make it my whole life. I learned from him however he never really uses an exact recipe (like many cooks he goes by taste and his eye), but I promise I will try to get one together. I will also be posting more Spanish dishes Thanks again Patty!
